Alteration of Mutagenic Potentials by Peroxidase, Catalase, and Superoxide DismutaseIn studies of the mutagens/carcinogens in foods using Ames’ . test, we found that peroxidase, catalase, and superoxide dismutase (SOD) affected the mutagenic potentials of the compounds present in various kinds of ordinary foods.
