描述This contributed volume compiles the latest improvements in the field of biotechnology. Enzymes from Microorganisms have wide applications in agriculture, pharmaceutical, biofuel industries, etc. their role in food industry is remarkable. Microbial enzymes prove effective in food preparations for enhancement of taste and texture. They aid in food fermentation in a cost-effective manner. Therefore, the quest for discovery of novel microbial enzymes goes on.
