African Transnational Diasporas strain reaches its maximum of protease synthesis after 48 hrs of submerged fermentation. The process of fermentation and enzyme recovery is described. The protease shows a pH-optimum of about 3, is stable between pH 3 and pH 6 at temperatures of 40 °C and has a temperature optimum of 60 °C.
