The Carbohydrates When they were first carefully investigated, in the 19th century, the simple sugars were all found to have the empirical formula C.H.O., and for this reason they were assumed to have arisen by some form of hydration of carbon (i.e. C. + .H.O). The name carbohydrates has stayed with them long after their real structures were discovered.
